Spinach Lasagna Rolls | Skinnytaste

   I have found a new recipe blogger I love. SkinnyTaste. She follows Weight Watchers points which I love. Tonight I made her Spinach Lasagna Rolls. I made the entire batch to eat over the short week we have coming up. I was surprised how easy it was. I did make a few tweaks to it in order to make it more of a meal for me and Jared.

What you Need:
  • 1/2 lb of ground Turkey (I prefer thighs)
  • Red Pepper flakes to taste
  • 3 cloves of garlic chopped
  • 9 lasagna noodles, cooked
  • 10 oz frozen chopped spinach, thawed and completely drained
  • 15 oz fat free or Skim Milk ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • salt and fresh pepper
  • 32 oz prepared tomato sauce
  • 3 oz part skim mozzarella cheese, shredded

  • What you Do:
    Preheat oven to 350°.

    Cook over Medium heat add olive oil, garlic and red pepper flakes. Cook until aromatic.


    Add ground Turkey thighs and brown. Add tomato sauce and cook on low until flavors are mixed. Add salt and pepper to taste.


     
     



    Ladle about 1 cup meat sauce on the bottom of a 9 x 12 baking dish.




    Combine spinach, ricotta, Parmesan, egg, salt and pepper in a medium bowl.

     
     


    Prepare the Lasagna as the box requires. Drain.


    Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry.


    Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.




    Ladle sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese.

     
     
     Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls. Enjoy!!
