Okra & Tomatoes for Dinner

Tonight Jared cooked a little taste the country. Okra, Tomatoes, and Onions. It was delicious!
This is southern cooking at its best. Okra is one of my favorite veggies. It is always good no matter how you cook it. It is great simmered in gumbo, pickled and fried. This is sauteed together with garlic, and a little ginger. Okay so the ginger is not from the southern textbook but it adds great flavor.  Also we did make it a little more non-country by only using PAM to cook with and adding cilantro. I guess you could call this Southern Fusion. No matter what you call it I call it Yummy.


Jared also cooked a  poblano pepper stuffed with chicken slow cooked  for 4 hours, bell pepper, cilantro, chipotle peppers, hatch chilies, and cheese. We ate it so fast I forgot to take a picture. It will be something we cook again so I will be sure to get it.

Okra and Tomato Recipe


What you will need:
Okra sliced
Tomato chopped
Red Onion Chopped
Garlic minced
Fresh Ginger minced
5 sprays of PAM
Salt and Pepper to Taste
Cilantro for Garnish

What To Do:
1. Spray PAM in a cast iron skillet. This is a must for any southern cooking.
2. Sauteed onion on medium heat for 4 minutes
3. Add garlic until fragrant
4. Add tomato and cook for about 3 minutes.
5. Add Okra, ginger and black pepper to taste.
6. Let simmer over medium low heat for 15 minutes
