Homemade Take Out - Ginger Lime Stir Fry

Tonight's dinner was our go to favorite. Stir Fry. We recently took a trip to the Asian Market so we  had all the ingredients to make it. Jared also made his amazing spicy ginger lime sauce. I know many people are afraid of tofu but it is one of our favorite things to cook. We mainly Stir fry it but we also love it baked. I personally can just eat it raw. I always sneak a piece after Jared chops it up. So here is how we made it.

How Jared comes up with this I have no clue. Here are all the items that go in the sauce.
Fish Sauce
Garlic Chili Sauce
Honey (locally produced)
Lite Soy Sauce
Rice Wine Vinegar
Lime Juice
Ginger
Corn Starch to thicken


 In the Stir fry we included a lot of veggies.
Bok Choy
(separate stems and leaves. They will be cooked at separate times.)
Baby Corn
Water Chestnuts
Lime Leaves
Onion
Jalapenos
Garlic



Brown the chopped Tofu in the Wok.


Here Jared is flipping the tofu in order to brown all sides. Once all sides are browned removed the tofu from the wok. We will add it back once all the other items are cooked.


Add onion, jalapenos,lime leaves and bok choy stems. Cook until tender.



Now add baby corn and water chestnuts. Cook until tender about 2 minutes.



Before adding the last of the Veggies fish out the lime leaves. Add bok choy leaves and mix well. These will need very little cooking. About 1 minute.
Then add back the Tofu.


It is time to get Saucy! Add in the Ginger lime sauce and mix well. Cook for for 3-5 minutes until the sauce thickens.



Chop Green Onion to Garnish. This was my contribution to the meal.




It's Dinner Time! Serve with brown rice and garish with Green onion.
